Coffee with milk jello (recipe)
Jun. 14th, 2022 07:50 pmMostly of use to me, but if you want a portable coffee that won't spill, you might try it. It's gluten-free, can be lactose-free. My particular gelatin is not plant-based but you should be able to sub gelatin substitutes if you are vegetarian/vegan.
I've been experimenting with gummi bears, and while I haven't had much luck with this recipe in a standard gummi bear format, it's still a quite clever way to take coffee along without any worry about spills.
You need:
2/3 cup coffee, lukewarm or cold (140 mL)
1/3 cup milk (note: mine was made with lactose-free dairy milk, haven't tried it with plant-based milks yet) (70 mL)
2 packets unflavored gelatin (approx 7.2 g/packet)
1 tsp (or to taste) sugar (optional)
Note: Technically speaking you are supposed to use 1 packet per 2 cups liquid, but I tend to use 2 packets with what comes out to 1 cup because it works well. You can likely use more of the coffee and milk without changing the amount of gelatin packets, up to 2 2/3 cups coffee (560 mL) and 1 1/3 cups milk (280 mL).
Pour coffee and milk into microwave-safe bowl. Mix in sugar and gelatin. Stir until the gelatin seems to be (mostly) dissolved. Let sit 10 minutes.
Microwave the mixture at your regular setting for about 30 seconds. If the gelatin does not seem to be fully dissolved, microwave another 15 seconds. Pour it into a small baking pan (something with edges) or just leave it in the bowl and cool for at least 20 minutes. Cut into squares.
(I use a small 7.5"x6" (approx 19cmx15.25cm) shallow baking pan and the recipe as written solidifies into about a nice though thin layer that's easily cut into small squares.)
