Eggless Eggnog
Dec. 5th, 2020 07:34 pmI found a recipe for eggless eggnog. It's not bad; not perfectly store-bought eggnog, but pretty good in itself.
https://www.allrecipes.com/recipe/240728/egg-not-eggless-eggnog/
It calls for milk, the milk I had was lactose-free and it came out okay.
Ingredients: Milk, sugar, nutmeg, ginger, allspice, imitation rum, instant vanilla pudding mix.
ETA: https://www.allrecipes.com/recipe/25854/eggless-eggnog/ is a similar recipe, but uses french vanilla instant pudding instead and omits the sugar, allspice and ginger.
(I'd probably do something partially inbetween; use vanilla pudding, probably lower the sugar to 1/4 (or more likely 1/8th) cup to cut down the calories a bit, keep all the spices in, and raise the imitation rum to 1 3/4 to 2 tsp.)
